Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 large egg
  • 1 packet 10–12 g baking powder
  • 1 cup 250 ml milk
  • ½ cup 130 ml sunflower oil
  • 350 g sour cherries, drained
  • 1 teaspoon sunflower oil, for greasing the pan
  • 1 tablespoon of breadcrumbs, for dusting the pan

Method

  1. Preheat your oven to 180°C (350°F). In a large bowl, combine the flour and baking powder.
Add the sugar, egg, milk, and sunflower oil. Mix until smooth.
Place a spoonful of flour in a separate bowl and gently toss the drained sour cherries in it. This helps prevent them from sinking.
Grease a baking pan with oil and sprinkle evenly with breadcrumbs.
Pour the batter into the prepared pan and scatter the cherries evenly over the top. Do not press them into the batter.
Bake until golden, and a toothpick inserted into the center comes out clean (about 30–35 minutes).
  2. Iren's tips:
Drain the cherries well to avoid excess moisture.
If using frozen sour cherries, thaw and drain thoroughly.
Dust lightly with powdered sugar before serving for a beautiful finish.
    How to serve?
Serve slightly warm or fully cooled with strong coffee or afternoon tea. A spoonful of lightly sweetened whipped cream makes it extra special.

Notes

  • Drain the sour cherries well to prevent excess moisture in the cake.
  • Tossing the cherries in a little flour helps keep them from sinking.
  • Do not press the cherries into the batter — they will settle naturally while baking.
  • Delicious, slightly warm, dusted with powdered sugar.
